What would it take to convert them over to functional pouches (ala MP Productions belts)?

As for functional pouches. It could be done, but it wouldn't be easy. I would have to rig some sort of a setup that would allow the flaps to continue to maintain that angle.
Not to say that I won't ever try making one, but my current focus is to make as many non-functional ones as possible.

Thanks for answering my question, sith_camero.

I realize that the screen-used Fett belts are thought to have been non-functional, but I've always been one for what I call robust accuracy with my props and costumes. To me, this means that I would like them to be as screen-accurate in appearance as possible, but in certain instances--functional vs. cosmetic pouches, metal vs. plastic blaster greeblies, etc--I prefer to go with the more robust version (metal parts, functional pouches, etc) if the option is available.

I am very seriously considering putting myself on the list for one of your ESB belts, but I haven't got the $$ to take the plunge quite yet.
