How exactly would I go about attaching the snaps to the back of the actual armor? Just straight out gluing it doesnt sound as if it would last.

I tried E-6000 industrial adhesive per TD-1536's online advise. It's still holding strong
after a year. Just glued the snap right to the armor. The other side is sewn to the vest.

The plastic, fiberglass or whatever your armor is will break before this stuff lets go.

yep, E-6000 works great for plastic. if your armor is metal, good old JB Weld is the best.

I used JB Quick on my chest and knee armor (to hold on the strap). It works great and I have never had a problem.
