Apparently, this idea has been floating around for a while, but I just saw a new article on Yahoo about it and never pondered it until today:

I actually think it is a pretty good idea. The storyline to the prequels was great. The execution of the story was horrible. And I am not just talking about the addition of Jar Jar Binks. The acting was mostly poor, which was really critical, because Hayden Christiansen turning to the Dark Side was not very believable to me. It relied too much on CGI, and I can't blame the actors for doing such a poor job when the dialogue was so cheesy.
All of these things could be easily fixed while maintaining the existing storyline. The only disadvantage to this is that it is spending time rebuilding a storyline where everyone already knows what is going to happen... but you could say the same thing about Rogue One.I think this could be interesting.
