A military sage colored flightsuit will a take far more work to convert than actually making one from scratch.  Nomex is not historically known for changing color that well.  I'm wearing one right now, and I can tell you it isn't even close to the right color for any of the suits.  Not to mention that you would have to remove all the external pockets and velcro to make it accurate.  And let me tell ya, some are stitched into the side seams, but all of them are a pain to remove.  It'll probably take longer to rip out the seams than to make a new suit.  There used to be a grey version of the nomex suit, but they haven't been used by the military for a few year now.
