Brother, not sure about templates but there have been a few builds lately both here and on other forums. Although there have been many great builds I particularly liked this one that featured on RPF of the most recent batch.
Boba Fett EE-3 blaster WIP-pic heavy
I think these blasters can look really great with a bit of work and think that this guy nailed it pretty well.
As for scopes I feel that most 4x20 scopes are pretty much the same these days in terms of their outwards appearance. The thing that sets the correct older models apart and really stands out for me is the slightly conical dust caps on the windage and elevation screws and the receiver rings (without going into too much detail).
Additionally the correct scope rings will probably divert all but the most discerning eye. The issue with the receiver rings is generally acquiring a set with the 'tall feet' but if you are modding and building anyway you could get set with the 'short feet' and make your own taller feet to go with them. I found the tall feet were pretty common last year but this year have not been so easy to track down (at a price I was willing to pay). Another alternative for you is and to make life really easy is that you could go ROTJ stunt blaster with the rings. The rings on the stunt blaster are made by cutting a single piece mount in to seperate pieces. The single piece mount for the stunt rings are ten a penny and widely available on many period 4x15 scopes. Look forward to your build.
Live the dream.
