I am looking into building an ESB Fett, I am 6'ft 4in (180lbs) am I to tall? Also I am looking into get this set of armor Yes or No Star Wars Boba Fett Mandalorian Complete Armor Kit Costume Prop Cosplay | eBay

That ESB Boba is a member here and he's 6'4" as well.

Hips plastic can be brittle and crack easily. The sculpt looks okay, but I'd be weary of it being brittle.

A lot of people are using armor pulled from abs plastics, very durable, or fiberglass. Plenty of vendors can be found here, you just have to find the one who's not on hiatus. Check in the cargo hold threads. Those are the sale/buy/trade threads
