How do we remove the mill marks, for the machined metal ears?

You can use fine grit sandpaper on it. If it is really rough you can start with a 300grit and work your way up. I did the same thing on my Aluminum RF and it came out nicely!

Though the parts are baby smooth, would some sort of polish be good?

Hit them with the 1000 Grit Polishing Steel Wool & then further polish them with up with "Mother's" Aluminum Mag & Wheel Polish!
