Where to begin?

I say the Dome .. that way you have an awesome Boba Lid you can display if you don't get around to the rest of the suit for awhile.. plus seeing that awesome bucket can help keep you motivated.:)

Here's some more info for you if you're looking to purchase some/most/all of your parts. Also take into account painting/assembling/etc. and whether you'll be doing that yourself or commissioning someone.

If you're going straight up scratch build, there's lots of tutorials and WIP's here in the Boba section where you can glean TONS of information/tricks/tips/techniques, you'll simply have to look and dig around a bit. Chances are that anything you are about to ask has already been discussed by others on the boards here who have gone before.
Good luck and have fun!

I started from the layer closest to the skin and worked my way out and once I'd got to the armour I started at the bottom and worked my way up but purchased a lid in the interim as it can be a stand alone display piece until the whole is done.

I like this idea. I sometimes don't finish big projects because of time or money or whatever - If I start with the helmet, at least I can have a cool display piece.

lid and blaster.

easily sellable if you lose interest.

This is kind of what I'm thinking. Although I wouldn't sell the pieces, I would display them. I'm thinking it's just a matter right now of prioritizing each part of the costume and doing it in order of least specific to the costume - most specific.
