Sintra Thickness

Generally it comes down to personal preference and what you are using it for. Personally I use 6mm as I find it to be more durable than 3mm, however it is harder to shape than 3mm and more difficult to get sharp folds etc. Also it is heavier so if you are going to have lots of plates you will need to be fitter to last all day wearing it.
 
6mm is actually quite easy to mold, a bit more time consuming but its not to bad, and Ive never molded 3mm sintra before, only 6mm.
