Jango Build Leather working questions?

Ok well I'm starting on my Jango Ammo pouches but I have some questions. I'm sure these questions have been answered before but I can't find it. First I would like to say I'm new to leather working so any input is welcome.
What Ounce leather should I be using to make the pouches? I was thinking 8 to 9 ounce but I'm not sure. Also wondering if the side panels are the same weight leather as the main body of the pouch?
It looks like the side panels on the pouches are glued should I be using leather weld for this or is there stitching somewhere that I can see?
Last question should I dye the leather first or last after it's assembled? If done after assembly will the leather weld prevent the leather from taking the dye?

"main body of the pouch"= 6/7oz
"side panels"=4/5oz
Pouch belt straps=6/7oz
Belt loop=6/7oz
Belt=8/9oz

Dye the leather before assembly. Use CA Satellite City Super T and NCF Quick accelerator to glue on the "side panels", sand the sides flush, then touch up with dye afterwards. [emoji106]

Well I'm having a bit of trouble getting the color right. I'm using Eco-Flo Waterstain Light Brown but for some reason it keeps coming out a reddish color. The side panels are coming out the right color however the main body of the ammo pouches are coming out that reddish color. All leather was purchased from Tandy the problem leather is the Oak-Leaf Sides leather. The single shoulder craftsman leather is coming out the right color. Any suggestions?
 
Use Eco Flo Java brown for a less reddish medium brown look. And then you can add more to darken it or lightly rub it with some Bison brown for a darker brown.

Well my first pouch is done measures 4.5" X 2.5". Please check out the pics. I think I got it right but please let me know if anybody sees anything that I need to change or do to it. All helpful criticism is welcome.

Thanks a million. I don't think I could have done it without your advice and wizardofflight's patterns. I had to modify the measurements slightly from the patterns in order to get the 501st measurements but I think I got it right (the first 2 pouches ended up in the garbage). I was a little worried that I might have gone to dark on the dye. but after looking at screen shots from the movie they seem a little darker than the museum pics. I'll post pics of the whole belt once I'm done.
 
All done except for the sizing. I want to wait until I get the rest of my costume done before I cut the belt to size. If anybody has any suggestions or knows of any improvements that I should make please let me know. Thanks again for all the help.
