I understand how the collar and back plate are attached to one another, but how is the back plate itself attached to the vest? My back plate seems to stick out at the bottom - did I not form it correctly?

Mine sticks out if left alone too. But the jetpack's weight holds the plate up to your back.
On the original suit a harness frame sat under the vest and backplate to support the weight of the jp it also helped to secure the backplate to the lower back.
Normally the back plate is attached only to the collar plate with studs and (as clonecollector said) the jetpack's weight is holding the plate in place. To prove this, here is an images with the ESB promo (from the SW Blu-Ray extra) which shows that on the back of the vest are no snaps or velcro:
And this image (from the ANH SE) shows that the back plate isn't attached to the jetpack frame:

I met a guy a couple weeks ago at Long Beach Comic-con who had a really nice Fett costume. He had a harness that kept the jetpack firm on his back and looked great. He told me that he manufactured them. Unfortunately, I lost my notes and forgot his name. Was it maybe Terry? Anyway, anybody know this righteous dude? I want to get myself a proper harness.
Yes Terry Boo boo Fett here...
Boo boo fett makes a really great jetpack harness...
