1. Is it possible to build such a helmet, did not play with these templates?
Do you just cut, and continue to follow the tutorial?
2. Is this helmet is a universal size?

Am I correct? The template for the helmet is one size. Most people can wear this, as there is sufficient room for even large heads. If you have an exceptionally large head, it is possible to use a photocopier to enlarge the templates.
Templates are not the only method to make Fett helmet. It all depends on skills and capabilities are as an artist. A person can sculpt a complete clay head based on photos alone, then make a mold from that clay original, and then make a casting out of fiberglass. People do that all the time. Not many Star Wars characters' heads or helmets can be made from templates, so Fett is one of those very few. It may take time and patience, but I believe it is worth it. The WizardofLight templates are accurate enough for a beginner to achieve a very respectable look. Without a template, all the proportions can be off. Many of the plastic helmets you see on ebay are sculpted by costume companies; they may have a basic Fett look, but the helmets look quite different from the movie Fett helmets.
If you are using the WOL templates, then my suggestion would be to not use aluminum unless you have a means of welding edges. Working with metal is more complicated than with cardpaper, plastic, etc.
The degree of difficulty depends on how far you want to go. Do a search in this Helmet forum, as there have been many documented attempts at making a Fett helmet out of WOL templates. Everyone has a slightly different approach. Find one that you feel best reflects your skill level. :cheers

ah! you're taping the paper from the printed off template together. transfer the templates to a card stock paper, or a light cardboard then start putting it together.

Please look at the fantastic tutorials of Antmanīs and Digifettīs works.
Antman used cardboard and Digifett used polystyrene.
I go another way and use aluminium sheet metal and for the dome I used a modified Skater helmet.
