I know in the carbonite chamber they were upside down, but I thought that was the only scene they were like that.

That's not in the film....not CANON! Wrong side up is OK, but Right side up (carbonite chamber) is the best!

This image throws me as you can see both knee darts which would mean one knee armour is the wrong way round ?

The correct knee setup is the way we see it in most of the suit versions:



While in ESB the knees are positioned and switched often, it doesn't mean it is the correct setup. But because it was onscreen, it is an accepted variant.

And by the way, congrats for the approval!
